espalier training with Guyot pruning; plant density 3,500 plants per hectare with average yield of 8,000 kg per hectare

Winemaking

soft pressing, static sedimentation in steel and fermentation at a controlled temperature of 16C for 20 days, refinement in steel on the noble lees and fermentation yeasts for 5 months

intense and persistent, decidedly aromatic with hints of citrus, lavender and Mediterranean spices

fresh, aromatic, balanced, with excellent flavour
